Lunch or Light Supper Vegetarian Supper

Here, you will find the recipe for a tasty egg dish that makes an ideal lunch or supper meal. With only three ingredients, it is a recipe that is quick and easy that all the family will enjoy. Children in particular love this, especially if they get to help make it. Make them in individual dishes for most appeal.

What you need: - the amounts recorded here are per one individual portion, simply multiply for the number you are cooking for.

  • 1 saucepan or pot
  • Cheese grater
  • Potato masher
  • Two potatoes per person or one for each young child. - Use potatoes that are light and fluffy such as Maris Piper, Rocket Red, or Kerrs Pinks. Any other good baking potato is suitable.
  • 1-2 ounces of strong flavoured cheese per dish. By using a strong flavoured cheese you need much less which equates to a lower fat content.
  • 1 egg per person.

Cooking Instructions:

  • Peel the potatoes and chopped into small chunks.
  • In a saucepan or pot, and over a medium heat, boil the potatoes in unsalted water for around 15-20 minutes until soft when tested with a fork. You don't need salt when you are adding cheese: if you use salted water to boil the potatoes, the dish can turn out too salty, to say nothing of the health benefits of reducing salt in your diet. You can always add salt at the table if you need to.
  • Drain potatoes and dry slightly in the pan over a low heat. Shake pan often to prevent sticking. This should only take a minute, you are just ensuring all the moisture has been removed so you don't have a soggy base for your recipe.
  • While the potatoes are boiling, grate the cheese.
  • Preheat an oven to 180-200 degrees.
  • Mash the potatoes.
  • Add the grated cheese to the mashed potatoes and mix in until the cheese is melted and completely mixed in. If you hold back a little of the cheese at this point, you can top the dish with it for a nice golden top.
  • Divide the potato/cheese mix into individual oven-proof dishes.
  • Make a deep hollow in the centre.
  • Break and egg into the hollow, try not to let the egg white go over the cheesy potato.
  • Sprinkly grated cheese on top of the potato mix NOT on the egg. Leave the egg exposed.
  • Bake in the oven for 10-20 minutes depending on your taste. I like my egg baked but with the yolk a little runny but some people prefer it solid. Check it often.

This makes a lunch or light supper meal.

Ann-Congratulations on being chosen Hub of the Day. I have never had this dish before. As I am a fan of cheese and potatoes, I will have to try this out. I would prabably eat this for dinner, rather than for lunch.

Oh, and Danette-having the egg in the middle suggests it will be quite easy for you to separate it from the cheese and potatoes for your husband.

yes it is cooked in a moderately hot oven, which is 350-400 Fahrenheit, 180-200 Celsius or Gas Mark 5
